100 g | sugar |
300 g | frozen red fruits |
2 tablespoons | lemon juice |
1 | egg white |
Preparation
- Place the sugar in the mixing bowl and program 15 seconds on speed 10. With the help of the spatula, scrape down the icing sugar that was accumulated on the sides of the mixing bowl.
- Add the frozen red fruits and the lemon juice and program 40 seconds on speed 5. With the spatula, bring down what was accumulated on the sides of the mixing bowl and program again for 30 seconds on speed 5. Check to see if the mixture is consistent and, if necessary, program a few more seconds at the same speed.
- Install the butterfly whisk.
- Add the egg white and program 3 minutes on speed 4. Serve immediately.
Suggestion: Make the iced foam with the fruit (or mixture of fruits) that you like the most: blackberries, blueberries, raspberries or strawberries.
