|300 g ||white sugar
|4 ||egg yolks
|1000 g ||full fat cream
|2 ||tsp vanilla extract
|1 ||pinch salt
|400 g ||strawberries, hulled
- Place sugar into mixing bowl and mill 30 seconds on speed 10. Add egg yolks, cream, vanilla, and salt; cook 10 minutes, at 80ºC on speed 4. Pour mixture into container and allow to cool.
- Place strawberries into mixing bowl and blend 10 seconds on speed 9. Add to strawberries, mix together 10 seconds on speed 4. Pour into a container and freeze for at least 8 hours.
- Remove from freezer, cut into squares, place into mixing bowl and blend for 20 seconds on speed 9, then 10 seconds on speed 4. Place into an airtight container and freeze for at least 4 hours.
