Mango sorbet

Mango sorbet

Ingredients

200 g raw sugar
2 egg whites
600 g ice cubes
1 lemon, ½ zest and all the juice
800 g frozen mango cubes

Preparation

  1. Place sugar into mixing bowl and mill 30 seconds on speed 10.
  2. Add zest and juice of lemon, egg white, and ice cubes blend 30 seconds on speed 10.
  3. Add mango blend 2 minutes on speed 10. Make sure to stop each 30 seconds to mix all with the spatula.
  4. Serve straight away, or place in freezer.
